Ay Papi was born from a moment—and a memory. A photo of our boss, Juan, as a child, lying in a hammock with his dad in Yauco, Puerto Rico, was beautifully transformed into a painting by a Denver muralist, and it became the spark that led to Ay Papi.
“Ay, Papi” has always been a term of endearment between fathers, sons, and friends. It represents closeness, love, and identity. It’s playful, warm, and rooted in connection.
Ay Papi celebrates Puerto Rico and Latin culture in full color—the diversity of not just its people but its music, beaches, and soul. It’s a place to be yourself, enjoy expressive cocktails, and immerse in Puerto Rican and Latin energy and creativity. Our drinks are vibrant and transportive, evoking the breezy feeling of a beachside escape.

Nicole Lebedevitch discovered her passion for creating experiences through music, which led her to study piano at Berklee College of Music in Boston. There, she built a strong reputation in hospitality, rising through top bars like Eastern Standard, The Hawthorne, and Yvonne’s—eventually overseeing beverage programs and full restaurant operations. In 2016, she was named one of Boston’s Best Bartenders by Thrillist.
In 2019, she moved to Denver and opened Forget Me Not, now one of the city’s most acclaimed cocktail destinations. Since then, she’s helped launch several other standout bars in the city, bringing her signature blend of creativity, precision, and hospitality to each space.
